Dr Dave's Ribs

DrDave's Spirits & Orange Spiced/Marinated Pork Ribs

Preparation time: 20 minutes

Marinating Time: 6 hours to overnight

BBQ time: 30 minutes
Oven time: 30 minutes (Optional if you don't want BBQ Sauce on your grills)

Serves 12

8 Lb Pork side or back ribs
1 Oz ea Rum & Brandy
or 2 Oz Cognac
12 Oz Beer
12 Oz Orange marmalade or Juice
8 Oz Apple Juice
1/4 Cup Low Sodium Soy Sauce
2 Tsp Sesame oil
2 Tbs Brn Sugar
1 Cup White Onion
1 Oz Fresh Ginger Root (Optional)
2 Cloves Elephant Garlic (The more the better)
1/2 Tsp Dried Habanero Powder
1/4  TSP Curry powder
1 Tsp Salt
1 Tsp Fresh Ground Pepper

Using a screwdriver, lift the membrane (silverskin) from the Pork Rib Bones. Cut into pairs if you wish.

Puree in a blender, marinade ingredients and pour over Pork; seal with plastic wrap and refrigerate 6 hours or overnight, turning ribs occasionally. Do not use a metal bowel or foil, you will get a reaction!

Remove ribs from marinade and place on grill. Close lid and BBQ over low to medium heat 15 minutes. Turn ribs; baste with marinade and cook lid closed, 15 minutes or more until golden brown. If your BBQ flares up, have a spray bottle of water handy to put out the blaze, don't worry, a little black on the ribs adds charector. My guests loved it.

Drench in DrDave's BBQ Sauce
Place in oven safe dish and bake for 30 minutes at 350 Deg or leave on grill at low temp (messy) until done.
